Science of Matcha Whisking
March 21, 2024
Matcha is a suspension of microscopic particles, usually with a thick head of froth. Left to time, the particles sink to the bottom and the foam disappears. The rate of decline is determined by the whisking skill and the quality of the tea.

The audio is turned into text using AI tools, and most transcripts are not checked by hand afterwards.
The tools work from a list of the tea, Japanese and Chinese words we use often, tencha and Uji among them, and from the forty or so transcripts we did correct by hand, which a new episode is compared against.
They still get things wrong, and we are sorry if you find one. The hand corrected transcripts may carry errors too. We are a small team, please forgive us.
We hope you find these transcriptions useful and thanks for visiting our site.
